Ingredients

G 500 minced meat moose (or wild boar)
G 50 breadcrumbs
G 20 finely chopped or dried thyme
N 1 finely chopped onion
N 1 egg
N 1 tsp ground black pepper
N 3 junipers
mL 30 concentrated meat stock
mL 400 meat stock
mL 150 cream
G 15 tomato sauce
G 200 lingonberries
G 40 butter
G 6 salt
N 1 pot parsley
Corn starch to taste

For the mashed potatoes

N 10 medium-sized floury potatoes
mL 200 cream
mL 5 truffle oil
G 75 butter
Salt and pepper to taste

Preparation

  • For the meatballs brown the onion in a knob of butter so that it takes on color. Mix in 50 mL of cream and breadcrumbs and set aside to swell for a while.
  • Add the minced meat, egg, thyme, pepper, salt and junipers in a bowl and stir to a smooth batter. Roll meatballs of any size and fry them in a frying pan with the remaining butter.
  • Add the cream, meat stock, concentrated stock, tomato sauce and let simmer for about 15’. If needed, season the sauce with corn starch to thicken and add the lingonberries in the last minutes.
  • For the mashed potatoes, peel and boil the potatoes in salted water. Pour off the water and let the potatoes steam. Mash the potatoes with a balloon whisk or larger fork. Add hot cream to desired consistency on low heat and add butter and truffle oil to taste. Season with salt and pepper.
  • Serve and top with chopped parsley.
