Peas in their pods with chunks of chamois meat
G 400 small chunks of chamois meat
G 200 fresh peas
G 200 soft Stracchino cheese
Grated stale bread (flavoured with marjoram and lemon zest) to taste
Salt and pepper to taste
EVO oil to taste
- Season the chamois meat with the flavoured bread, salt and pepper; place the meat on a roasting pan covered with parchment paper and roast it in the oven at 180°C for 14 minutes.
- Remove the peas from their pods, blanch the pods in boiling water for a few minutes, drain, let them cool and season with salt, pepper and olive oil.
- Stuff the pods with Stracchino cheese and fresh peas.
- Rub some Stracchino cheese on a serving plate and lay down the stuffed pods and the hot chunks of meat on it.
