Wild boar nuggets in orange sauce with speck and misticanza salad
Ingredients
G 800 chunks of wild boar meat
G 200 misticanza salad (mixed salad)
G 200 speck
N 1 clove of garlic
G 100 extra virgin olive oil
N 1 orange
Rosemary to taste
Thyme to taste
Mustard to taste
Salt to taste
Black pepper to taste
Preparation
- Cut the speck into thin slices.
- Carefully wash the misticanza salad and dry well.
- Use a microplane to grate some orange zest and squeeze the fruit to get the juice.
- In a bowl using a wire whisk, beat the orange juice with salt, mustard, pepper and a drizzle of extra virgin olive oil until you have an emulsion.
- Brown in a non-stick frying pan the wild boar nuggets, roast all sides, add the speck slices and salt to taste.
- Arrange the misticanza salad and the nuggets with speck on a serving dish. Pour over the orange emulsion and serve immediately.
