Peposo of wild boar
Ingredients
1000 g wild boar meat
50 g flour
1 onion
10 g black peppercorns
10 g white peppercorns
10 g Sichuan peppercorns
10 g Jamaican peppercorns
1 head of garlic
2 bay leaves
1 liter Chianti
Preparation
- Trim the meat and cut it into 2 cm cubes.
- In a large pot, sauté and brown the julienned onions.
- In a pan, brown the wild boar cubes that have been coated in flour.
- Place all the peppercorns in a piece of cheesecloth, tie with string, and close it.
- In the pot with the onions, add the wild boar, garlic cloves, bay leaves, and the cheesecloth with the peppercorn mix. Pour in the wine. Cover and cook for about 4 hours.
- Serve the wild boar stew in a deep plate, discarding the garlic cloves.
