CHITARRINE WITH GAME RAGOUT
Ingredients
G 150 minced wild boar meat
G 150 ground venison meat
G 320 chitarrine pasta
G 500 tomato sauce
N 1 white onion
Juniper berries to taste
Rosemary to taste
Extra virgin olive oil, salt and pepper to taste
Preparation
- Brown the diced onion in a pan with a little oil. Add the wild boar and venison meat.
- Brown the meat well, add the tomato sauce and juniper berries. Cook over low heat for about 10-15’ and add salt and pepper to taste.
- Cook the chitarrine in plenty of salted water, check the cooking time on the package. Drain the pasta and toss for a few minutes with the meat sauce.
- Serve the chitarrine with a sprig of fresh rosemary and freshly ground pepper.
