WILD BOAR BURGER WITH SAVOY CABBAGE AND MULLED WINE
Ingredients
G 150 ground wild boar
G 80 hazelnuts
mL 200 red wine
G 100 sugar
N ½ lemon and orange zest
N ½ cinnamon sticks
N 4 cloves
G 500 cabbage
G 12 Salt
G 20 Extra virgin olive oil
Vinegar and pepper to taste
For the bread
G 330 strong type “2” flour
G 115 butter
G 12 sugar
G 10 honey
G 12 fresh brewer’s yeast
G 6 salt
mL 200 milk
For the smoked mayonnaise
N 2 egg yolks
mL 50 vinegar
mL 300 seed oil
Burnt leek powder and salt to taste
Preparation
- Form a soft and elastic dough in the planetarium with all the ingredients for the bread. Double the dough and form 100 g balls. Let rise again until the dough doubles and cook at 220 ° C (428 °F) for 10‘.
- Clean the cabbage and cut into julienne, keep an outer leaf. In a bowl, season with salt, pepper, oil and vinegar. Let it rest for 15’.
- Place the cabbage in a pot with an airtight seal and cover with part of the leaf stored for 15 days.
- After 15 days, heat an iron pan well and brown the cabbage vigorously. Soak with white wine and cook for 15’ with water.
- Prepare the mulled wine by reducing red wine, sugar, lemon and orange zest, cinnamon and cloves until you obtain a shiny and dense glaze.
- Whip the yolks with vinegar to make mayonnaise. Continue to whip the yolks by pouring the seed oil flush until a stable emulsion is obtained. Salt half the amount of the oil and add the leek ash.
- Season the ground wild boar with extra virgin olive oil, salt and pepper and form the hamburgers.
- Heat the bread and cook the burgers in a pan. Stuff the sandwiches by placing the mayonnaise at the base of the bread, put the burger on it, then the cabbage, again the mayonnaise, the reduction of mulled wine and finally the chopped hazelnuts. Close the bread like a sandwich.
