Wild boar stew with potatoes

700 gr of wild boar meat cut into small cubes
30 gr white wine vinegar
30 gr still white wine
80 gr extra-virgin olive oil
250 gr potatoes
300 gr vegetable stock
Rosemary, sage and lemon zest to taste
Salt and pepper to taste



  • Take a pan, fill it with water, salt lightly, add the wine vinegar and bring it to the boil, put the boar meat cubes in it for approx. 1 minute and drain them afterwards.
  • In a pan sauté sage and rosemary with  40 gr olive oil, add the wild boar stew meat and simmer with wine until reduced.
  • Add the vegetable stock, cover and cook medium high setting for 15 minutes.
  • Peel, wash and dice the potatoes in small cubes.
  • Boil some water with wine vinegar (as in step one) and cook the potatoes in it for a few minutes, then drain. Sauté them with the remaining olive oil.
  • Add the potatoes to the wild boar meat, add a little salt and pepper to taste and let it cook until its sauce is reduced.
  • You can serve this dish with mixed berries and some Italian black summer truffle, at will.
