“PUTTANESCA” HAMBURGER
Ingredients
G 600 minced wild boar meat
G 30 Tropea onion
G 10 soy sauce
G 10 Worcester sauce
G 80 extra virgin olive oil
N 2 clove of garlic
G 300 peeled tomatoes
G 20 capers
N 1 anchovy
G 50 green pitted olives
Parsley to taste
Oregano to taste
Salt to taste
Black pepper to taste
Preparation
- Season the minced wild boar meat with the clove of garlic, Tropea onion, soy sauce, Worcester sauce, half of extra virgin olive oil, salt and pepper.
- Remove the garlic and shape into burgers, each about G 150.
- In saucepan, stir-fry the garlic, the extra virgin olive oil and the chopped anchovy. Add tomato, olives, capers, oregano and cook slowly for about 10′. Add salt and pepper to taste.
- Pan sear the fillet in a non-stick frying pan 5′ on each side, add salt. Arrange on a serving dish accompanied with the “puttanesca” sauce and sprinkle with chopped parsley.
