Ingredients

  • G 600 minced wild boar meat
  • G 30 Tropea onion
  • G 10 soy sauce
  • G 10 Worchester sauce
  • G 80 extra virgin olive oil
  • N 1 clove of garlic
  • G 300 peeled tomatoes
  • G 20 capers
  • N 1 anchovy
  • G 50 green pitted olives
  • Parsley to taste
  • Oregano to taste
  • Salt to taste
  • Black pepper to taste

Preparation

  • Season the minced wild boar meat with the clove of garlic, Tropea onion, soy sauce, Worcester sauce, half of extra virgin olive oil, salt and pepper.
  • Remove the garlic and shape into burgers, each about 150 g.
  • In saucepan, stir-fry the garlic removed from the meat, the extra virgin olive oil and the chopped anchovy.  Add tomato, olives, capers and  cook  slowly for about  10 minutes. Add salt and pepper to taste.
  • Pan sear the fillet in a non-stick frying pan 5 minutes on each side, add salt. Arrange on a serving dish accompanied with the “puttanesca”  sauce and sprinkle with chopped parsley.
