Ingredients

G 900 canada goose legs
G 100 worcestershire
mL 118 soy sauce
G 50 brown sugar
mL 70 honey
G 9 red pepper or chilli flakes
mL 6 apple cider vinegar
G 6 corn starch
N ½ onion
N 3 stalks celery
G 14 salt
G 9 black pepper

Preparation

  • Preheat the oven to 160°C (325°F).
  • Heat a large pan with extra virgin olive oil. Cut and brown the goose legs to all sides for 8’ each side.
  • Once browned, move into a pan to rest. Sauté the onions in the dutch oven.
  • Mix all of the liquids and spices together. Add in half of the liquid mixture to the dutch oven to deglaze the pan.
  • Add in the remaining liquid mixture the chopped celery and the goose meat. Add water if needed to fully cover the meat and bring to a boil. Then add the liquid and cook in the oven for 5 h. Stir every hour.
  • For the sauce, in a pan add the braising liquid with the corn starch, previously dissolved in water. Stir until slightly thickened. Add the sauce on the goose meat.
  • Serve the goose meat with salad or sweet potato fries and a kale caesar salad.
