Ingredients

N 1 skinless wild turkey breast
N 2 cups (mL 500) buttermilk
N ¼ cup (mL 65) pickle juice
N 1 cup (mL 250) hot sauce
N 1 egg
N 2 cups (G 275) flour
N ½ cup (G 70) Cayenne pepper (reduce by half if you want less hot)
N 1 tbs (G 20) garlic powder
N 2 tbs (G 60) salt
N 4 sliced white bread
Butter to taste
Pickles to taste
Coleslaw to taste

Preparation

  • Sliced the wild turkey breast into 1cm (½”) slices.
  • Prepare a sauce mixing together buttermilk, pickle juice, hot sauce and flavor the sliced raw turkey for at least 2 h, then remove each piece with tongs.
  • Season the flour with Cayenne pepper, garlic powder and salt, then toss the turkey in the seasoned flour and dip back into the sauce and coat with the seasoned flour for a second time.
  • Preheat a deep fryer to 175 °C (350° F), fry turkey until golden in colour and crispy.
  • Remove from oil and shake off excess oil, transfer into a bowl and toss with your favourite hot sauce.
  • Serve on a slice of white bread with pickles and coleslaw on the side.

Nashville, Tennessee is known for their legendary “Hot Chicken” but I think it is even better with wild turkey! The dish is deep fried and typically served on a slice of white bread with bread and butter pickles accompanied by coleslaw or mac and cheese. It can also be made into a sandwich.
