VEGETABLE SOUP WITH WILD BOAR TATAKI
Ingredients
G 400 wild boar fillet
N 1 clove of garlic
G 40 chopped onion
G 50 carrots
G 50 celery
G 50 potatoes
G 100 pre-cooked Borlotti beans
G 500 vegetable broth
G 50 Caprino cheese
Extra virgin olive oil to taste
Salt to taste
Black pepper to taste
Rosemary to taste
Marjoram to taste
Preparation
- Lightly fry the chopped onion with extra virgin olive oil in a pan then, add the carrots, celery, potatoes cut into cubes and vegetable broth. Cook for 20′.
- Add the Borlotti beans and season with salt and pepper. Blend one-fourth of the mixture with a minipimer and pour it into the rest of the vegetables. Keep warm.
- Cut the wild boar meat into nugget sized chunks and sear them on both sides in a non-stick frying pan, adding garlic, rosemary and marjoram.
- Pour the vegetable soup on a serving dish, arrange the wild boar nuggets and garnish with Caprino cheese and rosemary.
