FARRO WITH WILD BOAR OSSOBUCO
Ingredients
G 400 wild boar shanks
G 320 hulled wheat
mL 600 water
G 50 extra virgin olive oil
N 1 egg
G 100 tomato puree
N 1 pinch of pepper
N 4 basil leaves
Salt to taste
Preparation
- Put the farro, the boar shanks and water into a pan.
- Once the farro is approximately half-cooked, according to the relevant cooking directions for the type of farro chosen, add the tomato puree.
- When cooked, the farro should be of a creamy consistency. Remove from the heat and add the already beaten egg, tempered with a spoonful of boiling water.
Mix everything together well. - Put the spelt in a dish and add a sprinkling of pepper and a basil leaf.
