WILD BOAR MEAT ROLL WITH “BROCCOLETTI”
Ingredients
N 4 wild boar slices G 100 each
G 200 ground wild boar
G 50 black olives
N 1 anchovy
G 4 capers
G 10 breadcrumbs
G 30 fresh cream
G 200 fresh ricotta
G 150 Collesi blonde beer
G 200 broccoletti
Salt to taste
Black pepper to taste
Extra virgin olive oil to taste
Preparation
- Pound the slices of wild boar meat.
- Season the ground meat with olives, capers, anchovy, breadcrumbs, fresh cream , salt and pepper.
- Spread the mixture over each slice and roll them up.
- Sear the meat rolls on all sides in a non-stick frying pan without fats. Add the beer, cover and cook slowly for about 7/8′. Add salt and pepper to taste.
- Blanch the broccoletti for few seconds, drain and cool. Season with salt, pepper and extra virgin olive oil.
- Arrange the ricotta on a serving dish, add the broccoletti and the meat roll with its sauce.
