Wild boar mini burger with lime mayonnaise and misticanza salad
Ingredients
Bread:
G 900 soft wheat flour
G 200 whole milk
G 100 corn flour
G 100 egg yolks
G 100 sugar
G 80 vegetable margarine
G 80 extra virgin olive oil
G 30 brewer’s yeast
G 20 malt
G 20 salt
Mayonnaise dressing with extra virgin olive oil:
N 1 egg
G 200 extra virgin olive oil
Salt and pepper to taste
Lime juice to taste
Mustard to taste
Burger:
G 200 minced wild boar meat
G 20 chopped Tropea onion
N 1 egg white
G 20 bread crumbs
G 20 grated Pecorino cheese
Salt and black pepper to taste
Extra virgin olive oil
Preparation
Bread:
- Mix all the ingredients in the planetary machine and mix until a smooth, homogeneous dough is formed (add salt and fat ingredients last)
- Let it rise for about 30′.
- Shape bread rolls of G 60; let them rise in a moist heat place (in the pre heated turned off oven, leaving inside a bowl with hot water).
- Brush with milk and garnish the surface with some corn flour.
- Bake at 180° for 5′ (with the bowl of water)
- Then, bake at 180° for 5′ (without the bowl of water).
Mayonnaise dressing with extra virgin olive oil:
- Prepare a common mayonnaise using extra virgin olive oil instead of seeds oil. Add mustard to taste.
Burger:
- Season the meat with all the ingredients, shape into burgers and cook in a non-stick frying pan on both sides.
- Fill the bread rolls with the meat, the mayonnaise and the misticanza (mixed salad). Serve hot.
