MOOSE WRAP WITH YOGURT SAUCE AND PARSLEY OIL
Ingredients
For the meat
G 400 thin slices of moose
dL 1.5 water
dL 0.5 extra virgin olive oil
N 1 tbsp paprika spice
N 1 tbsp Cayenne pepper
N 1 tbsp dried thyme
N 1 tbsp cumin
N 2 tsp salt
N 2 tsp pepper
For the yogurt sauce
G 300 Turkish yogurt
N 1 tbsp liquid honey
N 1 lime
N ½ pot of thyme
Salt and pepper to taste
For the parsley oil
dL 3 extra virgin olive oil
N 1 garlic clove
N 1 pot of parsley
Salt to taste
Garnish
G 40 grated red cabbage
G 40 finely chopped black cabbage
G 30 arugula
G 20 pickled red onion
G 10 roasted onion
N 1 carrot
N 10 cherry tomatoes
N 1 fist of sunflower sprouts
N 1 silver onion
N 4-8 tortilla breads
Preparation
- Mix the yogurt, the honey, the thyme, the juice of half lime in a pot; taste with salt and pepper and, if you like, add more lime juice.
- Heat the oil slightly. Put all the parsley, the garlic in a blender and add the oil. Mix to a smooth oil, season with salt.
- Cut the vegetables to the desired size.
- For the moose, put oil to a hot frying pan, add the meat and fry until colored. Add the spices – paprika spice, Cayenne pepper, thyme, cumin, salt and pepper – and water. Let simmer a little.
- Serve everything in a tortilla bread and do not skimp on the sauces or the pickled red onion.
