Ingredients

G 400 pheasant breast
G 200 breadcrumbs
N 2 limes
N 12 bamboo skewers, 15 cm
N 12 mint leaves
mL 100 fresh cream
N 1 lemon
Extra virgin olive oil to taste

Preparation

  • Clean the pheasant breasts thoroughly and cut into strips approx. 2cm wide along the length of the breast.
  • Season the breadcrumbs with plenty of oil, salt, freshly ground pepper, grated lime zest and chopped mint.
  • Bread the pheasant breast strips by pressing the meat in firmly, so that the bread sticks.
  • Slide strips onto the skewer, threading them over and then under, to create a wave pattern.
  • Cook on the grill, adding plenty of oil before placing them on the fire.
  • Season the sour cream with a few drops of lemon and a pinch of salt, taking care that it does not thicken too much.
  • Serve the skewers hot, alongside a spoonful of sour cream.
