Homemade pasta with herbs and hare
Ingredients
G 400 home-made pasta
G 300 hare meat
G 20 onion
G 50 bacon
G 10 Brandy
G 100 boiled and dried herbs
G 100 butter
N 1 anchovy
Thyme, Rosemary and Sage
N ½ Lemon
Salt and Black pepper to taste
Preparation
- Heat extra-virgin olive oil in a saucepan and cook chopped onion.
- Add hare meat and bacon pounded with knife, anchovy and let cook well.
- Add Brandy and let evaporate then, add the chopped herbs. Season with salt and pepper.
- Roll out the dough and form the tortelli.
- Cook the tortelli in plenty of boiling salted water.
- Melt the butter in a pan, add a pinch of salt and toss the tortelli (previously drained) together with the chopped herbs and lemon.
