NOODLE SALAD WITH MOOSE
Ingredients
G 600 moose meat
G 300 rice noodles
G 45 sliced kale
10 cherry tomatoes
10 sugar snaps
8 asparagus
½ silver onion
½ fennel
Salt and pepper to taste
Extra virgin olive oil to taste
For dressing
2 lime (juice)
G 15 sugar
G 15 chopped red chili
mL 45 fish sauce
mL 15 rice vinegar
mL 15 soy sauce
mL 20 sesame oil
5 drops of Worcester sauce
1 chopped clove of garlic
Preparation
- Mix lime juice, fish sauce, rice vinegar, soy sauce, sesame oil, Worcester sauce, garlic, sugar, and chilli, and let it stand for a while.
- Boil the rice noodles according to the instructions on the package.
- Cut the vegetables into strips or desired sizes. Mix the vegetables with the dressing.
- Salt and pepper the meat. Fry in oil to an internal temperature of 48° C (119° F) and let the meat rest for about 5-10’. Then it should reach a temperature of about 55° C (131° F) (medium).
- Mix the dressing with the noodles and put it on a plate. Cut the meat and top the noodles with it.
