Roast wild boar in milk
Ingredients
G 800 wild boar boneless loin
G 80 butter
G 60 bacon
N 1 clove of garlic
N 1 laurel leaf
G 500 milk
G 500 cream
N 1 yellow pepper
Lemon zest to taste
Flour to taste
Salt and pepper to taste
Preparation
- Tie the wild boar meat with a string. Lard with bacon and garlic, roll it in flour and let it brown in a saucepan with the butter.
- Combine cream and milk together and pour one spoon over the meat. Add laurel leaf, lemon zest and cook over low heat, pouring the remaining cream and milk, little by little.
- Add salt to taste and serve with the reduced sauce and sautéed pepper.
